There’s been a huge debate in my house over what I should name this recipe. While I originally sought to call this my recipe for chicken tenders, my middle son Tommy insists that since these are made with chicken breasts instead of chicken tenderloins, these are chicken “breasties,” and NOT “tendies.” And since my son Tommy is the most accomplished of my children, being an auto mechanic (as you can see from my picture on the left!) and able to replace the steering wheel of a 1990s Chevy convertible, I decided to oblige!

But whatever you decide to call them, all can agree that I make the best chicken. And, these breasties are totally versatile. Whether you serve them on a sandwich, with a side of mashed potatoes, or as the base for a chicken parm, they are sure to make a splash at the dinner table!

Why you’ll love this recipe:

  • It’s fast – This recipe comes together faster than you can beat Lego Star Wars using glitches.
  • It’s cheap – All you need are some chicken breasts, breadcrumbs, an egg and some seasoning!
  • You can get out your lingering aggression – Using the tenderizer to pound the chicken breasts is strangely therapeutic. I often find myself making this recipe the most when my son Toby is home for dinner.
  • It’s customizable – You can swap out the seasonings for whatever you’re feeling to switch it up.
  • You can get everything at Trader Joe’s – Personally, I think the meat section at Trader Joe’s is unmatched. They offer organic breasties as a fraction of the cost.

Tips and Tricks:

This recipe is fairly straightforward, but there are some small mistakes you can make which will result in soggy breasties. Here are my top 5 tips for a delightfully crunchy meal.

  • Wait until your oil is hot – putting in the chicken to fry before the oil is hot is a guaranteed way to get a soggy end result. Make sure to wait until the oil is hot enough!
  • Utilize Paper Towels – When your chicken is cooked, lay the breasties on to paper towels to eliminate any grease.
  • Check your temperature – Make sure you use a meat thermometer to confirm that the chicken is cooked to 175 degrees.
